Review: A stellar meal experience hosted by two Michelin-starred Chef Alberto Ferruz and Taj Mahal Palace Mumbai

After successfully hosting two editions of the ‘Spanish Extravaganza’, Taj once again forayed into the land of gastronomic experiences, Spain, this time with Chef Alberto Ferraz. Chef Alberto is a master of flavors and is known for his innovative take on traditional Spanish Cuisine from the Jávea and the Marina Alta regions. His restaurant BonAmb just received its second Michelin star and third Repsol Sun within just eight years of opening its doors. We went in to try the same.

The culinary journey began at the Taj’s flagship, The Taj Mahal Palace Hotel in Mumbai, for a three-day Spanish feast that took place from 13th to 15th December 2019, at The Chambers. Chef Alberto Ferruz designed a Michelin dinner experience with signature recipes. We loved the bold distinctive flavors such as a ‘Cucumber and Curry’ appetizer. The Seaweed crisp, Mediterranean salted fish, Cucumber and curry and Scallop flower with sesame were perfectly nuanced and delicately delish. From the mains, Fish with the goodness of collagen, lemon, leek ash and Lamb with Dryland seaweed and a remember juice were rockstar of dishes. The dessert-‘Spiced Aubergine’  with cardamom, miso, and lemon was distinctly delicious.

On the same, Taljinder Singh, Senior VP – SeleQtions & South Mumbai Hotels and General Manager – The Taj Mahal Palace, Mumbai, said, “The Taj Mahal Palace, Mumbai has always been instrumental in bringing in the best of global cuisines and experiences to India. Our engagement with Spanish food and its culture has been a massive success year after year, and we look forward to creating some exciting memories with Chef Aberto this year.”

The stellar six-course Spanish tasting menu was paired with eclectic wines from the region. The best part of the meal was that freshness took center stage in every dish whipped up. The menu was inventive, exquisite and unlike anything we’ve had.
